Steak:
Here we are using flank steak, though there are so many other great options for you, too! Just watch out not to overcook it. If you are using leftover steak, be careful not to overcook it and slice it afterward. Then slice and use.
Tortillas:
If you like corn flavor, then you can use corn tortillas. There are other options like white or wheat flour; what you want to use is up to your flavor.

There are so many other good options, including shredded Mexican blend, cheddar, or mozzarella, or really any cheese that melts nicely.

For the Steak:
- We use a 1 lb steak
- 3 tbsp of olive oil
- 2 tbsp of taco seasoning
- 1 tsp of salt
For the Peppers and Onions:
- 2 bell peppers, finely cut into dice
- 1 red onion, finely cut into dice
- 4 garlic cloves in crushed form
- 1 tsp dried oregano for fresh flavor
- ½ tsp red pepper flakes/chilli flakes
- 1 tsp of salt
For the Quesadillas:
- 4 flour tortillas or as many as you want.
- 4 cups shredded cheese. You can use mozzarella cheese and cheddar cheese.
- 2 tbsp chopped cilantro
Preparation step by step:
Step 1:
In a small bowl, mix the onion and cilantro and sprinkle with salt.
Step 2:
Cut the avocado into two pieces and mash into a chunky mixture. Then add some salt and lemon juice and mix it well.
Step 3:
Sprinkle salt and pepper all over the steak to season it well.

Put a slice of mozzarella in the middle of the skillet, then place a tortilla on top. Cook until the cheese melts and starts turning golden and a little crispy, about 30 to 60 seconds. Quickly slide a thin spatula underneath to lift the tortilla with the cheese and move it to a plate, cheese-side up. Do this with the rest of the tortillas and cheese.

Clean the skillet with a wipe, then heat it on medium high.

Now we cut the steak into small pieces and place them on top of the cheesy tortillas. Add some of the layer of mashed avocado and some onion on top. Fold in half and serve Iine a right away, with fresh salsa served alongside.
