Quick Chocolate Pie Recipe for Your Busy Weekdays

When I talk about chocolate pie, my family often assumes it’s French silk pie or chocolate chess pie, but it is just a classic pie with rich, healthy ingredients like a creamy pudding filling. You can easily serve this chocolate cream pie with creamy shrimp pasta it just depends on your mood.
This chocolate cream pie recipe is too easy. We make it all year, like mother’s lunch ideas or summer lunch ideas. Anyway, in this chocolate pie, there is no whipped cream, no fruit, and no topping.

Why This Chocolate Pie Recipe Works

No box mixes or shortcuts:

Now, I’m sharing all my tips and tricks to make it healthy, fresh, and creamy in texture. When it’s ready, serve it with cheesy Steak Quesadilla .

Sets perfectly so it’s sliceable:

The hidden secret is to add the right ratio of cream and milk, cook low and slow until the filling is thick, and leave it for a few hours or overnight to cool.

Real chocolate, not just cocoa:

We use melted chocolate instead of cocoa powder, which makes a real difference. It brings stability and depth to your body and also gives a silky and mouth-melting texture.

Perfect for making in advance:

This chocolate cream pie chills in the refrigerator for at least 6 hours before serving. This chocolate pie is an ideal and classic dessert.

Ingredients for chocolate cream pie: cream, cornstarch, eggs, dark chocolate, butter, sugar, salt, and vanilla labeled on dark background

Ingredients:

Ingredients for the pie:

Chocolate:

I use dark chocolate 60% to 70%. While chocolate chips work well, use a finely chopped chocolate bar.

Granulated sugar:

This ingredient doesn’t just give sweetness to the filling but also melts during cooking. Granulated sugar also helps thicken the pudding and gives the pie that silky, smooth, and easy to slice texture.

Cornstarch:

While flour is a common thickener in chocolate pie recipes, cornstarch gives the same result without leaving that heavy, pasty texture.

Eggs:

5 egg yolks for this recipe, and the whites are used for meringue
Milk & heavy cream. Using both whole milk and a heavier cream helps create a filling that’s smooth but still holds its shape well. Be sure to use whole milk along with heavy cream, double cream, or heavy whipping cream.

Butter:

I use unsalted butter and season with salt on my own. Added along with the chocolate after cooking. This salt gives the filling that last touch of shine and a smooth, silky consistency.

Ingredients for the meringue:

Two steps of making chocolate cream pie filling: stirring custard base, then whisking in melted chocolate and flavorings

  • 5 egg whites
  • ⅛ teaspoon salt
  • Add 4 tablespoons of fine granulated sugar

How to Make Chocolate Pie

Make sure all your ingredients are prepped before you start cooking, as things happen fast once the pudding is on the stove. Chop the chocolate and butter, measure the vanilla, and set up your strainer in the heatproof bowl beforehand.

Step 1: Cook the filling:

Whisk the dry ingredients together in a heavy bottomed saucepan. In another cup, combine the egg yolks, milk, and cream, then gradually add this liquid mixture into the cornstarch mixture, whisking as you go.

Step 2: Add the butter, chocolate, and vanilla:

Once removed from heat, stir in the chocolate, butter, and vanilla. Now whisk until you get a silky, glossy chocolate mixture.

Step 3: Pour into the (cooled) crust:

Strain the custard through a fine mesh sieve into a heatproof bowl to remove any lumps or small bits of egg, keeping the filling silky smooth. After straining, transfer it into your prepared crust.

Step 4: Cover and chill:

Use a spoon or spatula to smooth the top of the pie, then place plastic wrap directly on the surface to stop a skin from forming. Chill in the fridge for at least 6 hours before adding whipped cream and serving.

Instructions:

  • Preheat the oven to 350°F.
Cocoa, sugar, flour, salt, egg yolks, and milk. These ingredients are whisked together in a saucepan.
  • Cook over medium heat stir continuously, until the mixture bubbles and thickens, roughly 5 to 10 minutes. Whisk out any lumps that form. Remember, the filling won’t get thicker in the oven, so cook it to your preferred consistency beforehand.
  • Now, take the chocolate filling off the heat and mix in the vanilla and butter.
  • While the custard is cooking, prepare the piecrust by placing it in a shallow 9 inch pie pan, poking holes with a fork, and baking until lightly golden, roughly 20 minutes.
  • For the meringue, add the egg whites, salt, and sugar to a mixing bowl, then whip on high speed until light, fluffy, and forming soft peaks in 3 to 5 minutes.
  • Once the crust is nicely browned, take it out of the oven. Pour the chocolate custard evenly into the shell, then spread the beaten egg whites on top. Bake uncovered until the meringue peaks turn lightly golden, roughly 10 minutes. Serve while warm.
  • According to Grandma, this pie tastes great warm, even better chilled, and when frozen, it’s just like enjoying a popsicle.

    Notes

    • Do not cook the filling on high heat the eggs can scramble if rushed.
    • Use a heavy-bottomed saucepan to prevent overheating and ensure a smooth texture.
    • If the filling turns grainy, it was likely cooked too long or too hot; lower the heat and stir more often next time.
    • Store in the fridge, covered, for up to 4 days. Freezing is not recommended, as the texture can turn watery or grainy.
    • For a gluten-free version, Cup4Cup gluten-free flour has worked well for others (not personally tested).
Pro Tip: Prepare all your ingredients and equipment including your heatproof bowl and fine mesh strainer before you start cooking. Once the filling begins to thicken, it happens fast, and you'll need to act quickly to keep it smooth and prevent overcooking.

Tips :

Don’t rush it:

This chocolate cream pie filling takes time. Avoid cooking on a high flame. The sugar must melt gradually for the pie to set correctly. Cooking too fast risks cooking the eggs too quickly, similar to scrambling them.

Do use a heavy bottomed saucepan:

At the very least, steer clear of a thin, flimsy pan. A heavier bottom keeps the filling from overheating and lets the eggs cook slowly, resulting in a smooth, silky, and perfectly thick chocolate pie filling.

Mise en place:

Prepare all your ingredients, measured and ready, before cooking. Have your heatproof bowl and fine mesh strainer set up in advance. When the filling thickens fast and needs immediate attention to keep it from overcooking.

If your filling is too runny:

It just needs a little more time on the stove! Keep whisking patiently until you notice the mixture thickening and starting to bubble. Cooking times can vary quite a bit depending on your stove and cookware, but if 15 minutes have passed and you’re still not seeing results, don’t worry it’s completely fine to increase the heat slightly to move things along.

If your filling turned grainy or is too thick:

This most likely happened because the filling was cooked for too long or at too high a temperature, which caused the eggs to cook. To avoid this next time, lower the heat and stir often to keep the filling from overheating.

Storing:

Wrap it with plastic wrap and refrigerate for up to 4 days. It’s best to avoid freezing, since the filling can lose its smooth texture and become watery or grainy after thawing.

Gluten-Free Note:

I haven’t personally tested this, but others have had success making the recipe using Cup4Cup gluten-free flour.

What to Serve with Chocolate Pie?

we can serve it with Creamy shrimp pasta or Ground Beef and Rice Casserole, try  it and enjoy the meal.

Frequently Asked Questions:

Why is my chocolate pie runny?

Your Chocolate Pie is likely runny because the filling wasn’t cooked long enough to properly thicken. Make sure it visibly bubbles before removing it from heat, and let it chill fully before serving.

What’s the difference between chocolate pie and French silk pie?

Chocolate pie has a cooked, pudding style filling made with eggs, milk, and cornstarch, giving it a firm, sliceable texture. French silk pie, on the other hand, has a light, airy, mousse like filling made by whipping butter, sugar, and eggs together, with no cooking involved. This makes French silk pie richer and fluffier, while chocolate pie is denser and more custard-like.

Can I freeze this chocolate pie recipe?

Freezing isn’t recommended for this Chocolate Pie, as the filling tends to turn grainy or watery once thawed. It’s best to store it in the fridge and enjoy it within 4 days for the best taste and texture.
