Ingredients:

1 pound smoked sausage:
We can use chicken or beef sausage. You will make what your family likes.
5-6 cups of vegetables:
Bell peppers, sweet potato, Green beans, and cauliflower or broccoli are my favorite vegetables to use in this Sheet Pan Sausage and Veggies. However, you can replace them with any hearty vegetables that roast well.
Olive oil:
We make Sheet Pan Sausage and Veggies here. This dish is all about roasting; a bit of olive oil is essential to coat the sausage and veggies properly.
A large white onion:
cut into quarters and sliced, adds flavor and texture to the dish.
Salt and pepper: In our house, we prefer fine sea salt and also use black pepper; don’t forget that ingredient.
Dried herbs and spices:
To add flavor, I combine garlic powder, smoked paprika, oregano, basil, and cumin, using roughly ½ teaspoon of each. There’s no need to measure exactly; feel free to adjust based on your taste or add more of your favorites.
- 1 teaspoon of granulated onion adds a mild onion flavor to the dish.
- Arugula greens can be added on top as an optional finishing touch.
How to Make Sheet Pan Sausage and Veggies:
Prep the Vegetables:
It really helps to prepare the veggies properly, so they all finish cooking at the same time. Just wash the baby red potatoes; no need to peel then chop them into small pieces. Halve each one, then dice the halves into about 10-12 pieces per potato. Trim and halve the green beans, cut the broccoli into small florets, chop the peppers into 1-inch bits, and slice the sausage into ½-inch thick like coins.
Preheat the Oven:
Preheat your oven to 400°F, then line a large sheet pan (18×13 inches) with foil paper.
Make the Seasoning Mix:
Put the granulated onion, garlic, smoked paprika, and paprika into a small dish and mix well. Then set the seasoning mixture aside for a while.
Season the Potatoes and Onions:
Now, put the quartered baby potatoes and sliced onions into a large bowl. Add 1 to 2 tablespoons of olive oil, a bit of salt and pepper, and sprinkle in around ⅓ of your seasoning mix.
Arrange on the Sheet Pan:
Mix it all and spread it in an even layer on your prepared sheet pan.
Season the Peppers and Tomatoes:
In a bowl, combine the sliced bell peppers and cherry tomatoes. Put some olive oil, sprinkle in salt, pepper, and another ⅓ of the seasoning mix, then mix it well. Spread this mixture over the potatoes and onions that are already on the sheet pan.
Add the Sausage:
Arrange the sausage pieces on top of the veggies, brush them with a bit of olive oil, and evenly sprinkle the remaining seasoning over the entire dish.
Bake the Sheet Pan:
Now start baking in the oven for 40 minutes. Remove the pan from the oven, then change the oven setting to “broil.”
Add Shishi to Peppers and Broil:
We add some shishi to peppers to the sheet. In the oven, things should broil for 4 to 5 minutes.
Finish with Olive Oil:
Remove from the oven and broil with a touch more olive oil if desired.
Garnish and Serve:
Serve topped with fresh parmesan cheese or a sprinkle of fresh parsley, as you like.
