Oven Roasted Cabbage

Crispy, caramelized cabbage wedges with tender centers — roasted with just olive oil and simple seasonings.

Ingredients
  

  • 1 medium head green or white cabbage cut into 4 wedges (core intact)
  • 2 –3 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1/2 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1 lemon for squeezing before serving

Method
 

  1. Preheat the oven to 450°F (230°C).
  2. Peel away any tattered outer leaves, rinse the cabbage, and pat dry thoroughly.
  3. Cut the cabbage into 4 wedges, keeping the core intact so the wedges hold together.
  4. Coat both sides of each wedge with olive oil, then sprinkle with garlic powder, red pepper flakes, salt, and pepper.
  5. Arrange wedges in a single layer on a baking sheet.
  6. Roast for about 25 minutes, until browned, caramelized, and tender.
  7. Squeeze fresh lemon juice over the top just before serving.
